I have two students who want to learn this tune from Shapes, so I thought I'd get started on a chart and pass it along.

The beats are written in the center of the measures to help you navigate the syncopation.

This is just the basic groove for now, I'll add the bridge soon.

Those are some clever rhythm games. One of my favorite things about playing classical piano music was when the composer decided to write with notes not divided by two, ex. eighths opposite triplets or sixteenths opposite sextuplets. I have even done 5 notes per quarter and 7 notes per quarter. It's fun for the mind.

Glad you like it, sage. For quintuplets and beyond, an easy way to practice those kinds of rhythms is to say words that contain the exact number of syllables in the time that it would take to play the notes (this is dine in teaching Indian music, I hear).

I always love writing out syncopations like these, to see how things shake out either side of the beat, and I always beam the 8ths and 16ths together and break them for each beat, otherwise it's way too confusing to count it, in my opinion.
